Copenhagen, 12 March: René Redzepi, the acclaimed chef behind the world-famous restaurant Noma, has stepped down from his leadership role following allegations from former employees of abusive behaviour in the kitchen.

In a statement posted on social media, Redzepi said he would leave the restaurant after more than two decades at its helm, writing that it was time for “extraordinary leaders” within the team to guide the establishment into its next phase. The Danish chef acknowledged past mistakes, adding that “an apology is not enough” and that he takes responsibility for his actions toward staff.

The resignation follows a report based on interviews with former employees who described a workplace culture marked by intimidation and mistreatment. Some workers alleged they experienced verbal threats and physical aggression during their time in the restaurant’s kitchen, while others spoke of long-term emotional stress caused by the working environment.

One former staff member, Jason Ignacio White, said he chose to speak publicly about his experience after witnessing what he described as widespread abuse. “The repercussions of staying silent are worse than speaking up,” he said, adding that many colleagues felt pressure to tolerate the behaviour in one of the world’s most prestigious kitchens.

The controversy also sparked protests outside a Noma pop-up event in Los Angeles organised as part of a limited international residency. Labour-rights advocates criticised the restaurant’s culture and called for greater accountability in the fine-dining industry. Saru Jayaraman of the advocacy group One Fair Wage questioned whether diners should support establishments linked to worker mistreatment.

The backlash had financial consequences as well. Several corporate partners withdrew from the Los Angeles residency, including American Express, which had been associated with the event before the allegations surfaced.

Redzepi also announced that he would step down from the board of MAD, a food-industry non-profit he founded in 2011 to support education and development in the restaurant sector.

Despite his departure, the Noma team is expected to continue its planned activities in Los Angeles without him. The restaurant, founded in 2003, has earned global acclaim for its experimental cuisine and focus on Nordic ingredients. It has received three Michelin stars and has repeatedly topped the list of the world’s best restaurants.

Redzepi said that although the organisation had attempted to improve its culture in recent years, he recognised that past harm could not be undone, and he expressed hope that the restaurant would move forward under new leadership.
